Grapes removed from the stems by hand and macerated for 5 days. Fermentation at 22-24ºC so that it can be extended for 20-25 days. During the alcoholic fermentation there is no pumping over, only stirring and punching down to moisten the cap and totally submerge it. It is then transferred to new, French-oak barrels for the malolactic fermentation with the temperature controlled at 21ºC.

Red wine made with grapes from Finca Las Navas, a real treasure based on the masal selection (selection of suitable reproductive material from the best plants) of the Tempranillo plant. It is a vineyard that is grown next to the winery with the care and attention of a large plantation of nearly 4 hectares, with a north-south orientation and clay-limestone soil typical of Rioja Alavesa. This estate wine is made in 5000l French oak vats in a traditional way with destemmed grapes and whole berries. Carbonic snow is used beforehand to develop the longest possible intracellular maceration. During the alcoholic fermentation, which lasts 30 days, it is pumped over by gravity. It undertakes its malo-lactic fermentation in vats and is aged for 4 to 8 months on its lees.

Intense cherry colour. Aromas of fruit compote, aromatic herbs, bread and figs. A good sensation of macerated fruit. Plums, tobacco, smoked tastes and liquorice. Very flavoursome and round on the palate. There is a good balance between the tannins, which provide elegant French-oak ageing, and those which come from the grape variety. Finca La Canoca is a name of the place where the vineyard is located. It is difficult to access it, as it is situated on the foothills of the Toloño mountain chain, right at the foot of the district of Peciña, which belongs to the municipality of San Vicente de la Sonsierra.
This wine is a tribute to a vineyard in a silent valley where predominantly Tempranillo grapes are grown. The vineyard keeps a great secret; only 5,000 bottles per vintage are produced and the current one is the first on the market. The age of the vineyard is irrelevant if we think about the characteristics of this calcareous soil and its altitude of more than 600 meters. It is one of the last vineyards to be harvested precisely because time does not run so fast in the valley and its harvest requires care and dedication. After a manual harvest the bunches are collected in boxes and sorted out. Afterwards, an alcoholic fermentation is performed with native yeasts in 5,000-liter French oak vats, whereas the malolactic fermentation happens in barrels from centenary oaks at 20 degrees.
This wine has a lot to say, but a little to tell if we think that the history of this wine is yet to be written… It is the senses and perceptions that make a wine wonderful and our first vintage is born with the feeling of better new times.
Vineyards of a single estate located at about 640 meters of altitude, on the slopes of the Sierra de Toloño, in the town of San Vicente de la Sonsierra (La Rioja). It is a North-South facing plot on a clay-calcareous soil. The vines are over 50 years old.

Perfect to combine with all kinds of grilled meats, for example, lamb cutlets roasted with vine shoots or a good steak. And spoon dishes such as Rioja-style potatoes or red beans from Tolosa. It can also accompany an infinity of tapas.
Intense ruby colored wine with aromas of ripe fruit and spices. Its balance and freshness on the palate are positively surprising. Its unctuousness and its singular style stand out, with great potential in all its complexity is a true reflection of the terroir, which makes Finca La Canoca unique.
The whole process is done by gravity, in a vertical process, to preserve the integrity of the grapes as much as possible, so they reach the fermentation intact. All the movement of the grapes and wine is done using gravity, with no kind of mechanical lifting.
There is no hopper at reception and no pumping for moving the grapes or for pumping over in the vats which could damage them, all the way from the sorting tables to bottling the wine, via all the underground floors in the winery, thereby optimising all the phases of the process.
The grapes for our wines are grown according to sustainable agriculture methods, in harmony with Nature, using both traditional and modern methods. They come from old vines, deeply rooted in our land and in our culture, and their gift to us is their unique quality. They are picked by hand and processed in the most delicate way possible, in order to transform the authentic flavour of Nature itself into wine. The high quality of our wines comes ultimately from the vineyard itself and is nothing but the faithful reflection of the soil, climate and tradition of Rioja Alavesa.
The better the quality of the grapes, the better the wine will be. The best wines come from the best grapes.
The clusters are placed in crates with micro perforations to respect the grapes and to prevent fermentation from starting.
All the grapes are sorted manually on arrival with no use of hoppers.
Creating long-term trusty relationships

Bodegas BAIGORRI was designed and built by the architect Iñaki Aspiazu. The project responds to the peculiar way we make our wines and is a benchmark for architecture that respects its natural environment.

Inside, the winery has the most advanced technology, as a result of technological experiments. The winery goes through a continuous process of improvement; therefore, numerous research projects are being undertaken.
The Bodegas Baigorri restaurant is a journey through traditional cuisine and modernity, a menu based on seasonal produce from local sources, in pursuit of sustainability. With views over the vineyards and the barrel cellar, this is the ideal place for pairing our food with the bodega’s wines.
