BAIGORRI CASK-FERMENTED WHITE

A different white wine thanks to its fermentation in French-oak casks with a specific toast, giving it a balance between the fruit and the wood, complexity and backbone. Smooth and creamy on the palate and a rich array of aromas. The ageing on the lees brings substantial character and elegance.

VA white wine made from Viura (90%) and Malvasía (10%) grapes from old vines located exclusively in the Rioja Alavesa. After selective picking by hand, the destemmed grapes have been selected berry by berry using sorting tables which work via vibration and weight. The must macerates for a few hours with the skins before passing to the pneumatic press. Fermentation and a further 8 months’ ageing in contact with the lees take place in new, French-oak specifically light-toasted or no toasted casks.

BAIGORRI TEMPRANILLO

A young red wine made partly from whole clusters and partly with destemmed Tempranillo grapes. All the grapes have been selected by hand, cluster by cluster, using vibrating sorting tables.

The clusters of grapes are cold-macerated before a short fermentation process in stainless steel vats which, with careful working of the cap, give this wine a marked personality which makes it stand out from other wines of its kind.

VINEYARDS

Various plots located in Rioja Alavesa and Sonsierra with their typical chalky-clay soils. Average age of the vines: >45 years. Average altitude of the vineyards: approx. 550 metres. Training system: bush vines and bushes raised on trellises. Sustainable viticulture with 100% manual labor.

CHARACTERISTICS

100% Tempranillo

75 cl.

A wine for pairing with seasonal salads, charcuterie, soups, creams, game dishes, etc.

TASTING NOTES

Outstanding fruit aromas of redcurrants and blackberries, with a pleasant, lingering sensation on the palate with notes of liquorice and cough sweets. Because of the lack of astringency it is very pleasant on the palate and this is the most significant feature which makes it different from classic carbonic maceration wines.

BAIGORRI CRIANZA

In our Rioja Crianza we are seeking the balance between fruit and oak, freshness and concentration, elegance and powerfulness, a perfect harmony to appeal to all palates. The small proportion of Garnacha grapes in the blend makes it especially silky and appetising.

A red Crianza wine made using grapes of the Tempranillo (90%) and Garnacha (5%) varieties with a small contribution of other indigenous varieties, all cultivated exclusively in the Rioja Alavesa zone. After a selective, manual harvest, the destemmed grapes are selected by hand, berry by berry, using sorting tables which function via vibration and weight. Long periods of maceration and intercellular fermentation with autochthonous yeasts in truncated cone-shaped_ stainless steel tanks and oak vats. The pumping-overs are natural and devatted by gravity. The ageing in French (90%) and American (10%) oak casks lasts 14 months.

A new dimension of finesse, fragrance and elegance – bestowing on this wine their maximum expression.

Experimental vines planted in 2009 with yields of around 1200 kg depending on the vintage. An artisanal wine made in just four 225-litre casks. Grapes removed from the stems by hand and macerated for 5 days. Fermentation at 22-24ºC so that it can be extended for 20-25 days. During the alcoholic fermentation there is no pumping over, only stirring and punching down to moisten the cap and totally submerge it. It is then transferred to new, French-oak barrels for the malolactic fermentation with the temperature controlled at 21ºC.

100% Maturana, a neglected indigenous variety from _ Rioja Alavesa. With a surprising and powerful aromatic profile, this variety is almost extinct but has everything for making truly great wines.

GRAVITY

GRAVITY

GRAVITY PLAYS A KEY ROLE IN OUR WINEMAKING PROCESS

The whole process is done by gravity, in a vertical process, to preserve the integrity of the grapes as much as possible, so they reach the fermentation intact. All the movement of the grapes and wine is done using gravity, with no kind of mechanical lifting.

There is no hopper at reception and no pumping for moving the grapes or for pumping over in the vats which could damage them, all the way from the sorting tables to bottling the wine, via all the underground floors in the winery, thereby optimising all the phases of the process.

VINEYARDS

VINEYARDS

The grapes for our wines are grown according to sustainable agriculture methods, in harmony with Nature, using both traditional and modern methods. They come from old vines, deeply rooted in our land and in our culture, and their gift to us is their unique quality. They are picked by hand and processed in the most delicate way possible, in order to transform the authentic flavour of Nature itself into wine. The high quality of our wines comes ultimately from the vineyard itself and is nothing but the faithful reflection of the soil, climate and tradition of Rioja Alavesa.

OUR VINEYARDS WORK IN THE VINEYARD

PRECISE SELECTION IN THE VINEYARD

The better the quality of the grapes, the better the wine will be. The best wines come from the best grapes.

HARVESTED INTO SMALL PLASTIC CRATES

The clusters are placed in crates with micro perforations to respect the grapes and to prevent fermentation from starting.

MANUAL SORTING WITH NO HOPPER

All the grapes are sorted manually on arrival with no use of hoppers.

SELECTION

SELECTION

CONCEPTUAL ARQUITECTURE

The building is adapted to the pre-existing topography and all its underground facilities have been harmoniously designed. A place where you can overview how the whole winemaking process takes place. Bodegas BAIGORRI was designed and built by the architect Iñaki Aspiazu. The project responds to the peculiar way we make our wines and is a benchmark for architecture that respects its natural environment.

WINERY

WINERY

VIEWS OVER THE VINEYARDS

The Winery has been designed on the basis of maximum respect to the shape and the richness of the grapes and it is located within the village of Samaniego and at the foot of the Sierra de Cantabria mountains. The glass box of Bodegas BAIGORRI stands perfectly integrated into its surroundings, standing proud in an emblematic position in Rioja Alavesa.

Inside, the winery has the most advanced technology, as a result of technological experiments. The winery goes through a continuous process of improvement; therefore, numerous research projects are being undertaken.
